Stewed Peaches with Granola and Ice Cream

Chef Stephen Barrett shares an easy and delicious dessert that's perfect for Mother's Day.

Serves: 4

Total Time: 30 minutes

Ingredients:

• 1 tbsp of butter
• 6 peaches, sliced
• 1 tbsp of honey
• 1 tbsp of sugar
• 1 tsp of cinnamon
• 1 tsp of vanilla
• 1/3 cup of water or Nova Scotia sparkling wine
• 2 cups pf granola
• 1 tub of vanilla ice cream
• Optional garnishes – mint, berries, nutmeg, honey, maple syrup, nuts, honey, dried fruits or dark chocolate

Instructions

1. Turn stovetop burner to medium low.
2. Place pan or pot on burner and add 1 tbsp butter to melt.
3. Once melted, add 6 sliced peaches, 1 tbsp of honey, 1 tbsp of sugar, 1 of tsp cinnamon and 1 tsp of vanilla. Cook for five minutes.
4. Add 1/3 cup of Nova Scotia sparkling wine or water and continue cooking and stirring occasionally until liquid has evaporated and peaches start to soften. This will take 10 to 15 minutes.
5. Once peaches are softened to your liking, plate up by adding them to bottom of plate. Top with 2 tbsp of granola and 1 scoop of vanilla ice cream. Add optional garnishes if desired.
